The wine is bottled and closed with a bidule, the element that will collect the sediments during the refinement.
The bottles are sealed with a crown cap, ensuring perfect pressure sealing and promoting optimal maturation until the dégorgement.

Selection and assembly of the wines that will give rise to the sparkling wine.

THE CLASSIC METHOD

The Classic Method was born in France in the 17th century, but already in 1622, Francesco Scacchi, a doctor from Fabriano, described a process of refermentation in the bottle that anticipated the practices of Champagne by almost half a century. In his treatise, Scacchi illustrated a technique that exploited the natural sugars of the must to trigger the refermentation, without adding the traditional liqueur de tirage, a concept that some wineries are rediscovering today.

The modern diffusion of the Classic Method in Italy began in the 19th century, thanks to Carlo Gancia, who in 1865 produced the first Italian sparkling wine inspired by the French model.

Today, Italy is among the world leaders in the production of the Classic Method, with prestigious denominations such as Franciacorta DOCG, Trento DOC and Alta Langa DOCG. Tradition and the pursuit of quality have made the Classic Method a point of reference for producers and enthusiasts all over the world.
